002 — Philosophy

The idea should
survive the oven.

PASSEGUE begins where the mold becomes the design. We machine geometry to a tenth of a millimetre — so a chef's idea leaves the ring as architecture, not accident.

No silicone sag. No soft edges. Cast, chilled, unmoulded: what you drew is what you plate. This is the instrument, not the afterthought.

Facet.

Our opening form: a lattice of forty-two facets, every edge held to a tenth of a millimetre. It releases a dome that reads light like cut stone — sharp where pastry has always gone soft.
